Lactose
Lactose - milk sugar
Lactose is a sugar found in milk that is sometimes added to beer during the brewing process. Unlike most fermentable sugars, brewer's yeast does not ferment lactose. This means that it remains in the final beer, giving it sweetness, thickness and a smooth, creamy taste.
Brewers use lactose in a variety of beer styles, but it's most commonly used in stouts, porters, and mikl stouts. In these beers, lactose can help balance out the roasted malt flavor and create a more decadent feel to the drink.
Lactose can also be used in sour beers to help create a rounder flavor. In some cases, it can also be used in IPA beers to add body and help hide the bitterness of the hops.
