Calcium chloride - also called beer salt, is often used in commercial breweries. Calcium helps lower the pH of the wort, creating an optimal environment for enzymes to break down the grain. Adequate levels of calcium are necessary for the activity of enzymes that ensure the efficient conversion of starch to sugar. Calcium supports yeast health and promotes flocculation (settling of yeast cells) at the end of fermentation. Calcium does not directly create flavor, but it does affect the overall balance and structure of the beer. It is chloride ions that can give richness and sweetness to the taste. Maximum dosage - 200mg/l
